Some LCC  history

  Lighthouse Cake Co. (formerly known as Lighthouse Bakery), was owned and operated by Joy and Lindsay Funk since 1998. In 2018 the bakery changed hands to Vikki Smith. Vikki is a Red Seal Certified baker who has worked at the bakery for many years prior to taking over. While still embracing the recipes you all came to love, Vikki and her husband Richard continue to merge their own passion for the trade with the history of LCC.

Vikki Smith

Owner/Baker

After finishing baking school Vikki came to Lighthouse in 2014 to work her way to her Red Seal. After completing her training, Vikki bought the bakery. During her off hours she’s off spinning her heart out at local studio or spending quality time with her family.  

Richard Martin

Head Baker

Richard, also a Red Seal Baker, started his Lighthouse career after Vikki was offered the bakery in 2016. Transferring from another bakery this bread head is all about cake now. During his spare time you can catch him water skiing or out and about with their adorable dog Layla. 

Alisa Campbell

Manager/Baker

Alisa came to Lighthouse straight from baking school in June 2017, working her way through her apprenticeship with us and is now a Red Seal Baker. When she isn’t creating your next cake you can find her baking at home or at the gym.

Jess Ridgment

Customer Service

Jess came here from the UK with the dream of opening up her own cafe. In October 2020 she joined our team to learn about the baking industry. When she’s not assisting you with your next cake or decorating tarts you can find her exploring the many local trails.

Lorna Evans

Customer Service

Meet another Brit on our team, Lorna! Lorna loves all things baking and won us over with her bubbly personality. Her passion for make up artistry gives her an eye for beautiful pastry displays.
